Recipe for 4 people: carp 0,600 kg, onion 0,080 kg, root vegetables (carrots, celery) 0,200 kg, red pepper 0,050 kg, rice 0,040 kg, salt 10 g, lemon salt 2 g, lovage 20g, parsley 20g, hot pepper 4 pieces
Preliminary operations: the root vegetables (carrot, celery, onion) together with the red pepper are washed, cleaned and thinly sliced. From the 1.4 kg of fish you cut out 0,6 kg (from the belly) for the soup. The rest is boiled, mashed and strained. The lovage and the parsley are washed and chopped. The rice is washed.
Preparation technique: the chopped vegetables, the rice and the herbs are put to boil in the water where the fish and the mashed fish boiled. All the ingredients have to boil for 15 minutes.
To be served and presented: you serve it hot in a soup bowl and you add parsley and hot pepper on top.
Severin Pork Chop
Recipe for 4 portions:pork chop 0,640 kg, ham 0,080 kg, cheese 0,200 kg, tomatoes 0,200 kg, mushrooms from a can 0,160 kg, sauce Mornaise 0,080 kg, tartar sauce 0,200 kg
Preparation technique: the meet is sliced, bitten with a snitzel hammer and spiced. You add 80g of cheese and ham.You roll it, deep it in flower and fry it in oil. You put it on a plate and you add the Mornaise sauce on top. The rest of the cheese is cooked with breadcrumbs. You garnish everything with the tartar sauce and the tomatoes.
