Beef sirloin with baked potatoes and green sauce
 
 
 
Ingredients: beef sirloin 0.5 kg, bacon 100 g, olive oil 150 ml, green pepper 60 g, eggs 1, greenery 0.4 kg, vinegar 6 ml, salt 6 g, pepper 0.04 g, spices 4 g, baked potatoes 2 pieces.
 
Preparation technique: you slice the sirloin into two pieces. You cover the meat in bacon and you stick both pieces on a toothpick. You prepare the green sauce: you mix the olive oil with green pepper, egg, greenery, green onion, salt, pepper and vinegar. You keep it in a cold place. The beef sirloin is grilled. The potatoes are baked in the oven unpeeled.
 
To be served and presented: You take out the meat from the spit and you serve it with baked potatoes garnished with green sauce.
 
Chicken breast served with red cabbage,  chestnut paste and red bilberry sauce
 
Ingredients for 4 portions: red cabbage 0.8 kg, chicken breast 1 kg, mash potatoes 0.5 kg, chestnut paste 0.1 kg, butter 0.1 kg, apples 0.2 kg, oranges 0.2 kg, salt, pepper, cinnamon.
For the sauce you need 0.025 kg, red bilberry jam 0.1 kg, red wine 0.05 l, anise 0.001 kg.
 
Preparation technique: you clean, wash and cut the duck breast. You make an orange juice and you keep the duck breast in it for 2-3 hours. You prepare the mash potatoes. The red cabbage is thinly cut. The duck breast will be fried in butter until it gets caramelized and then you put it in the oven for 10 minutes. You mix the mash potatoes with the chestnut paste. The apple is sliced and boiled in wine together with the cinnamon. You fry the cabbage just a little bit in butter and spices. The red bilberries are slightly fried in butter. You baste everything with red wine and you make a reduction.
 
To be served: you lay the mash potatoes on a bed of red cabbage, you add the duck breast and decorate the plate with a slice of apple and red bilberry sauce.
 
Note: the duck breast should be cooked medium.
